A classic dessert with rich and creamy butterscotch filling in a buttery crust, perfect for any occasion.

- 1 pre-baked 9-inch pie crust
- 1 cup brown sugar (light or dark, packed)
- 4 tbsp unsalted butter
- 1/4 cup all-purpose flour
- 1/4 tsp salt
- 2 cups whole milk (warm)
- 3 large egg yolks (beaten, save whites if making meringue)
- 1 tsp vanilla extract
Instructions
- In a saucepan, melt butter over medium heat. Stir in brown sugar, flour, and salt until combined.
- Gradually whisk in warm milk and bring to a boil, stirring constantly until thickened.
- Remove from heat and temper the beaten egg yolks by slowly adding a bit of the hot mixture to them, then stir back into the saucepan.
- Add vanilla extract and mix well.
- Pour filling into the pre-baked pie crust.
- Allow to cool and set before serving. If making meringue, beat reserved egg whites and spread over the filling before baking until golden.
Notes
Best served chilled, and can be topped with whipped cream or vanilla ice cream. Leftovers can be stored in the refrigerator for up to five days.
