Description

A classic butterscotch pie with rich, creamy flavors and a flaky crust, perfect for any occasion.


Ingredients

  • 1 cup packed light brown sugar
  • 4 tablespoons cornstarch
  • 1/2 teaspoon salt
  • 2 cups milk
  • 2 egg yolks, beaten
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract
  • 1 (9-inch) pie crust, baked

Instructions

  1. In the top of a double boiler, combine the brown sugar, cornstarch, salt, and milk.
  2. Cook over medium heat, stirring constantly, until the mixture starts to thicken, about 20 minutes.
  3. Whisk in the egg yolks and continue to cook, stirring, until the filling thickens further.
  4. While the pudding mixture cooks, preheat the oven to 400°F (200°C).
  5. Remove the filling from heat and stir in the butter and vanilla extract.
  6. Pour the filling into the prepared pie crust.
  7. Bake in the preheated oven until the top begins to brown, about 5 minutes.
  8. Let the pie cool completely before serving.

Notes

Serve chilled or at room temperature, optionally topped with whipped cream. Store leftovers in the refrigerator for up to 3 days.
