- 1 cup packed light brown sugar
- 4 tablespoons cornstarch
- 1/2 teaspoon salt
- 2 cups milk
- 2 egg yolks, beaten
- 1 tablespoon butter
- 1 teaspoon vanilla extract
- 1 (9-inch) pie crust, baked
Instructions
- In the top of a double boiler, combine the brown sugar, cornstarch, salt, and milk.
- Cook over medium heat, stirring constantly, until the mixture starts to thicken, about 20 minutes.
- Whisk in the egg yolks and continue to cook, stirring, until the filling thickens further.
- While the pudding mixture cooks, preheat the oven to 400°F (200°C).
- Remove the filling from heat and stir in the butter and vanilla extract.
- Pour the filling into the prepared pie crust.
- Bake in the preheated oven until the top begins to brown, about 5 minutes.
- Let the pie cool completely before serving.
Notes
Serve chilled or at room temperature, optionally topped with whipped cream. Store leftovers in the refrigerator for up to 3 days.
