Description

Delicious cheesecake bars made with butterscotch and cream cheese in a crunchy graham cracker crust. Perfect for gatherings or cozy nights in.


Ingredients

  • 11 ounces butterscotch chips
  • 1/2 cup unsalted butter
  • 2 cups graham cracker crumbs
  • 8 ounces cream cheese, very well softened
  • 1 large egg
  • 1 can (14 ounces) sweetened condensed milk
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×9-inch baking pan with aluminum foil and spray lightly with cooking spray.
  2. Melt the butterscotch chips and butter together over medium heat in a medium saucepan, stirring frequently until smooth, about 5 minutes.
  3. Mix in the graham cracker crumbs, reserving 1 heaping cup for later. Press the remaining mixture firmly into the bottom of your prepared pan to form the crust.
  4. Beat the cream cheese in a stand mixer or using a handheld mixer until smooth and fluffy, about 2-3 minutes.
  5. Add the egg, sweetened condensed milk, vanilla extract, and salt to the cream cheese and mix until well combined.
  6. Pour the cheesecake mixture over the crust and sprinkle the reserved graham cracker mixture on top.
  7. Bake in the preheated oven for 32-35 minutes or until the top is set and feels springy to the touch.
  8. Cool in the pan for 1 hour at room temperature, then cover and refrigerate for at least 2 hours before serving.

Notes

Ensure cream cheese is very soft for a smooth texture. Don’t skip reserving graham cracker mixture for topping. For more butterscotch flavor, add extra chips to the filling.
