Delicious cheesecake bars made with butterscotch and cream cheese in a crunchy graham cracker crust. Perfect for gatherings or cozy nights in.

- 11 ounces butterscotch chips
- 1/2 cup unsalted butter
- 2 cups graham cracker crumbs
- 8 ounces cream cheese, very well softened
- 1 large egg
- 1 can (14 ounces) sweetened condensed milk
- 2 teaspoons vanilla extract
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C). Line a 9×9-inch baking pan with aluminum foil and spray lightly with cooking spray.
- Melt the butterscotch chips and butter together over medium heat in a medium saucepan, stirring frequently until smooth, about 5 minutes.
- Mix in the graham cracker crumbs, reserving 1 heaping cup for later. Press the remaining mixture firmly into the bottom of your prepared pan to form the crust.
- Beat the cream cheese in a stand mixer or using a handheld mixer until smooth and fluffy, about 2-3 minutes.
- Add the egg, sweetened condensed milk, vanilla extract, and salt to the cream cheese and mix until well combined.
- Pour the cheesecake mixture over the crust and sprinkle the reserved graham cracker mixture on top.
- Bake in the preheated oven for 32-35 minutes or until the top is set and feels springy to the touch.
- Cool in the pan for 1 hour at room temperature, then cover and refrigerate for at least 2 hours before serving.
Notes
Ensure cream cheese is very soft for a smooth texture. Don’t skip reserving graham cracker mixture for topping. For more butterscotch flavor, add extra chips to the filling.
