A delightful twist on the classic Caprese salad featuring roasted butternut squash, creamy avocado, and fresh mozzarella.
Ingredients

- 2 cups roasted butternut squash cubes (cooled)
- 1 cup cherry tomatoes, halved
- 1 ripe avocado, diced
- 1 cup mozzarella pearls
- Fresh basil leaves, chopped
- 1 tbsp olive oil
- Balsamic glaze, for drizzling
- Salt & black pepper, to taste
Instructions
- Toss butternut squash cubes with olive oil, salt, and pepper. Roast at 400°F (200°C) for 25–30 minutes or until tender. Let cool.
- In a large bowl, combine roasted squash, cherry tomatoes, avocado, mozzarella, and basil.
- Drizzle with balsamic glaze just before serving. Gently toss to combine.
- Enjoy immediately or chill for 15 minutes for a cooler, more refreshing bite.
Notes
For a more intense flavor, try using heirloom tomatoes. Adjust the balsamic glaze to your taste preference.
