Description

A delightful twist on the classic Caprese salad featuring roasted butternut squash, creamy avocado, and fresh mozzarella.


Ingredients

  • 2 cups roasted butternut squash cubes (cooled)
  • 1 cup cherry tomatoes, halved
  • 1 ripe avocado, diced
  • 1 cup mozzarella pearls
  • Fresh basil leaves, chopped
  • 1 tbsp olive oil
  • Balsamic glaze, for drizzling
  • Salt & black pepper, to taste

Instructions

  1. Toss butternut squash cubes with olive oil, salt, and pepper. Roast at 400°F (200°C) for 25–30 minutes or until tender. Let cool.
  2. In a large bowl, combine roasted squash, cherry tomatoes, avocado, mozzarella, and basil.
  3. Drizzle with balsamic glaze just before serving. Gently toss to combine.
  4. Enjoy immediately or chill for 15 minutes for a cooler, more refreshing bite.

Notes

For a more intense flavor, try using heirloom tomatoes. Adjust the balsamic glaze to your taste preference.
