  • 1 large egg

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Add the egg and vanilla extract; mix until combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually mix the dry ingredients into the wet mixture until just combined, avoiding overmixing.
  6. Scoop rounded balls of dough onto the baking sheet, leaving space between each.
  7. Optional: Sprinkle extra sugar on top of each cookie.
  8. Bake for 10–12 minutes, or until the edges are lightly golden. The centers may look soft but will firm up as they cool.
  9. Let the cookies cool on the baking sheet for a few minutes, then transfer to a wire rack.
