Description

A customizable and healthy salad recipe that lets you mix and match your favorite ingredients.


Ingredients

  • Mixed greens
  • Cucumbers
  • Roquefort cheese
  • Shallots
  • Croutons
  • Roasted beets
  • Sear filets (optional)
  • Olive oil
  • Vinegar
  • Salt
  • Pepper

Instructions

  1. Prepare the croutons by cubing bread and toasting them in a pan until golden brown.
  2. Roast beets by wrapping them in foil and baking until tender. Once cooked, peel and slice.
  3. Sear the filets in a hot pan with oil until cooked to your desired doneness.
  4. Slice cucumbers and shallots.
  5. In a large bowl, combine mixed greens, cucumbers, Roquefort cheese, shallots, roasted beets, and croutons.
  6. If using filets, slice them and add them on top of the salad.
  7. Drizzle with olive oil and vinegar, season with salt and pepper, and enjoy!

Notes

For best taste, keep salad components and dressing separate when storing leftovers.
