- 2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- Fruit preserves (your choice)
- Powdered sugar (for dusting, optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In another bowl, whisk together the flour, salt, and baking powder. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Roll out the dough on a floured surface to about 1/4 inch thick. Cut out rectangles using a knife or cookie cutter.
- Place a dollop of fruit preserves on half of the rectangles, leaving a border around the edges.
- Top with another rectangle and seal the edges with a fork.
- Bake in the preheated oven for 12-15 minutes or until golden brown.
- Let cool before dusting with powdered sugar if desired.
Notes
Store cookies in an airtight container at room temperature for up to a week, or freeze for longer storage.
