Delightful cookies that resemble classic pop tarts, filled with fruit preserves and dusted with powdered sugar.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • Fruit preserves (your choice)
  • Powdered sugar (for dusting, optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, salt, and baking powder. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Roll out the dough on a floured surface to about 1/4 inch thick. Cut out rectangles using a knife or cookie cutter.
  6. Place a dollop of fruit preserves on half of the rectangles, leaving a border around the edges.
  7. Top with another rectangle and seal the edges with a fork.
  8. Bake in the preheated oven for 12-15 minutes or until golden brown.
  9. Let cool before dusting with powdered sugar if desired.

Notes

Store cookies in an airtight container at room temperature for up to a week, or freeze for longer storage.
