- 2 large eggs

- 1 tsp baking powder
- ½ tsp salt

Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Roll out the dough to about ¼ inch thickness on a floured surface. Cut it into squares or rectangles.
- Place half of the squares on the prepared baking sheet. Add a spoonful of your chosen filling to the center of each.
- Place the remaining squares on top and press the edges to seal.
- Bake for 12-15 minutes, or until lightly golden.
- Let cool before icing if desired, then serve and enjoy!
