- 1 3/4 cups All-Purpose Flour
- 1/4 cup Cocoa Powder, unsweetened
- 1 tsp Baking Powder
- 1 tsp Cornstarch
- 1/2 tsp Salt
- 8 Tbsp Unsalted Butter
- 8 oz Chocolate Chips (milk, semi-sweet, or dark)
- 1 tsp Vanilla Extract
- 2 Large Eggs (room temperature)
- 3/4 cup Brown Sugar (packed)
- 1/4 cup White Sugar
Instructions
- Prepare the Chocolate Chip Cookie Dough: Make your favorite chocolate chip cookie dough and chill it in the fridge.
- Prepare the Brownie Cookie Batter: Whisk together flour, cocoa powder, baking powder, cornstarch, and salt. Melt 4 oz of chocolate chips and butter in a saucepan, stir in vanilla extract, and let cool.
- Mix the Batter: In a stand mixer, whisk eggs and sugars for 3-4 minutes until thick and pale. Stir in the cooled chocolate mixture and gently fold in the dry ingredients with the remaining chocolate chips.
- Chill the Dough: Place the brownie cookie dough in the fridge for 15 minutes.
- Form the Cookies: Preheat the oven to 400°F (200°C). Roll 1.25 oz portions of dough into balls, layering cookie and brownie dough to create a 5 oz cookie.
- Shape and Bake: Roll the dough balls together, bake for 10-11 minutes, then cool on the sheet for 10-15 minutes before transferring to a rack.
