Description

Brookies are a delightful treat that combines two favorite desserts: brownies and chocolate chip cookies. A rich, fudgy brownie flavor paired with classic chewy texture.

  • 1/4 cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1/3 cup Dutch-process cocoa powder
  • 1 cup all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2/3 cup semi-sweet chocolate chips
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon cornstarch
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup unsalted butter, cold and cubed
  • 3/4 cup light brown sugar, packed
  • 2/3 cup granulated sugar
  • 1 egg plus 1 egg yolk, room temperature
  • 2 teaspoons vanilla extract
  • 1 cup semi-sweet chocolate chips
  • Flaky sea salt for sprinkling (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper and set aside.
  2. Make the Brownie Cookie Dough: In a stand mixer, mix the room temperature butter and brown sugar on medium speed for about 3 minutes until fluffy. Add the egg and vanilla, and mix until combined.
  3. In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt. Sift this dry mix into the wet ingredients and mix on low speed until incorporated. Stir in the chocolate chips.
  4. Make the Chocolate Chip Cookie Dough: In a stand mixer, add the cold butter, brown sugar, and granulated sugar. Mix on low speed for 4 minutes until pale and fluffy. Add the egg and egg yolk one at a time, mixing well after each addition. Mix in the vanilla.
  5. In a separate bowl, whisk together flour, baking soda, cornstarch, and salt. Add the dry mixture in two batches to the wet ingredients, mixing on low speed until just combined. Stir in the chocolate chips.
  6. Form the Cookies: Using a small cookie scoop, scoop the brownie and chocolate chip cookie dough into balls. Press one of each together to form a single ball and place it on the prepared cookie sheet, 2 inches apart.
  7. Bake: Bake one sheet at a time for 8-9 minutes, until the edges are set and the tops are slightly underbaked.
  8. Cool: Let the cookies cool on the baking sheet for 5-10 minutes before transferring to a wire rack. Optionally, sprinkle with flaky sea salt before serving.

Notes

Store brookies in an airtight container at room temperature for 3-5 days, or freeze for up to 2 months.
