Description

A delicious combination of brownies and chocolate chip cookies, brookies offer rich, chewy brownie goodness topped with classic cookie dough.


Ingredients

  • 1 batch Kroll’s Kookies (chocolate chip cookie dough)
  • 1 3/4 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon cornstarch
  • 1/2 teaspoon salt
  • 8 tablespoons unsalted butter
  • 8 oz. (about 1 cup) chocolate chips, divided (milk chocolate, semi-sweet, or dark)
  • 1 teaspoon vanilla extract
  • 2 large eggs, room temperature
  • 3/4 cup packed brown sugar (light or dark)
  • 1/4 cup white sugar

Instructions

  1. Prepare the Chocolate Chip Cookie Dough: Make the Kroll’s Kookies and place it in the fridge to chill.
  2. Make the Brownie Cookie Batter: In a bowl, whisk together the flour, cocoa powder, baking powder, cornstarch, and salt. Set aside. Melt 4 oz. of chocolate chips with butter in a saucepan, stir in vanilla extract, and let cool. In a mixer, beat the eggs and sugars for 3-4 minutes until thick. Stir in the cooled chocolate mixture, fold in the dry ingredients, and remaining chocolate chips. Refrigerate for 15 minutes.
  3. Preheat the Oven: Set your oven to 400°F (200°C) and line baking sheets with parchment paper.
  4. Portion the Dough: Weigh out 1.25 oz. portions of both the chocolate chip and brownie cookie dough, and roll them into balls. Assemble the cookies by layering each type of dough to create a marbled effect.
  5. Bake: Place the cookies on the sheets and bake for 10-11 minutes. Let them cool on the baking sheet for 10-15 minutes before transferring to a cooling rack.

Notes

Chill the dough to prevent spreading while baking. Experiment with different types of chocolate chips or add nuts for variation.
