Description

A comforting and creamy soup made with fresh broccoli and rich cheddar cheese, perfect for chilly days.


Ingredients

  • 2 cups fresh broccoli, chopped
  • 1 cup shredded cheddar cheese
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Crusty bread for serving

Instructions

  1. In a large pot, sauté the onions and garlic over medium heat until translucent.
  2. Add the chopped broccoli and broth, and bring to a boil.
  3. Reduce heat and let simmer for about 10-15 minutes, until the broccoli is tender.
  4. Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.
  5. Stir in the cream and cheddar cheese until melted and well combined.
  6. Season with salt and pepper to taste.
  7. Serve hot with crusty bread.

Notes

For a smoother texture, blend the soup longer. Thicken the soup by adding more cheese. Experiment with different spices and vegetables!
