- 2 cups fresh broccoli, chopped
- 1 cup shredded cheddar cheese
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Crusty bread for serving
Instructions
- In a large pot, sauté the onions and garlic over medium heat until translucent.
- Add the chopped broccoli and broth, and bring to a boil.
- Reduce heat and let simmer for about 10-15 minutes, until the broccoli is tender.
- Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.
- Stir in the cream and cheddar cheese until melted and well combined.
- Season with salt and pepper to taste.
- Serve hot with crusty bread.
Notes
For a smoother texture, blend the soup longer. Thicken the soup by adding more cheese. Experiment with different spices and vegetables!
