A delicious twist on classic cheesecake combining creamy flavors with Brazil’s brigadeiro.

- 1 1/2 cup chocolate cookie crumbs (or digestive cookies)
- 1/4 cup melted butter
- 3 packages (225g each) softened cream cheese
- 1 cup sugar
- 1 tablespoon vanilla extract
- 3/4 cup sour cream
- 3 eggs
- 200g black chocolate, chopped
- 1/2 cup sweetened condensed milk
- 1/4 cup heavy cream
- Mini Brigadeiros (Brazilian chocolate truffles)
- Chocolate granulate
Instructions
- Preheat your oven to 180 °C (350 °F) and combine chocolate cookie crumbs with melted butter in a mixing bowl. Press into the bottom of a springform pan to form a crust. Bake for 10 minutes and allow to cool.
- In a large mixing bowl, beat cream cheese and sugar until smooth. Add vanilla extract and heavy cream, mixing well. Beat in eggs one at a time, fully incorporating each before adding the next. Pour cheesecake mixture over cooled crust.
- Bake for 55-60 minutes until the center is set but slightly wobbly. Allow to cool in the oven with the door ajar, refrigerate for at least 4 hours or overnight.
- To make the brigadeiro ganache, combine dark chocolate, sweetened condensed milk, and heavy cream in a small pan over low heat, stirring continuously until smooth. Pour over cheesecake and spread evenly.
- Decorate with mini brigadeiros around the edge and sprinkle chocolate granulate over the ganache. Serve chilled.
Notes
For best results, use room temperature cream cheese and cool the cheesecake slowly to prevent cracking. Customize with fruit purees or different chocolates if desired.
