A delicious blend of Brazilian brigadeiros and classic cheesecake, featuring a chocolate cookie crust, creamy filling, and decadent ganache.

- 1 1/2 cup chocolate cookie crumbs (or digestive cookies)
- 1/4 cup melted butter
- 3 packages (225g each) softened cream cheese
- 1 cup sugar
- 1 tablespoon vanilla extract
- 3/4 cup sour cream
- 3 eggs
- 200g black chocolate, chopped
- 1/2 cup sweetened condensed milk
- 1/4 cup heavy cream
- Mini Brigadeiros (for decoration)
- Chocolate granules (for decoration)
Instructions
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, combine chocolate cookie crumbs with melted butter, stirring until coated.
- Press the mixture into the bottom of a springform pan to form a uniform crust. Bake for 10 minutes and let cool.
- In a large bowl, beat the cream cheese with sugar until smooth.
- Add vanilla extract and heavy cream, mixing well.
- Beat in eggs, one at a time, until fully incorporated.
- Pour cheesecake mixture over the cooled crust, smoothing the top.
- Bake for 55-60 minutes, until the center is set and slightly wobbly.
- Let cool in the oven with the door slightly ajar, then refrigerate for at least 4 hours or overnight.
- For the ganache, combine dark chocolate, condensed milk, and heavy cream in a small pan over low heat, stirring until melted and smooth.
- Let ganache cool slightly, then pour over the cooled cheesecake, spreading evenly.
- Decorate with mini brigadeiros around the edge and sprinkle chocolate granules over the ganache.
- Cut and serve to enjoy the creamy layers.
Notes
Make sure to use softened cream cheese for easy mixing. Refrigerate overnight for the best texture.
