Ingredients

- 2 cups old-fashioned oats
- 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 cup milk (dairy or non-dairy)
- 1/2 cup unsweetened applesauce
- 1/4 cup honey or maple syrup
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup chopped mixed nuts (walnuts, pecans, or almonds)
- 1/2 cup dried fruit (raisins, cranberries, or chopped apricots)
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or grease it well.
- In a large bowl, mix together the oats, baking powder, cinnamon, and salt.
- In a separate bowl, whisk together the milk, applesauce, honey, egg, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir until fully incorporated.
- Fold in the chopped nuts and dried fruit.
- Divide the mixture evenly among the muffin tin cups, filling each about 3/4 full.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
Notes
These cupcakes can be served warm or at room temperature, and are great with nut butter.
