Description

A comforting and delicious breakfast for dinner recipe featuring fluffy pancakes, eggs, and crispy bacon.


Ingredients

  • 4 eggs
  • 1 cup of milk
  • 1 cup of flour
  • 2 tablespoons of sugar
  • 1 teaspoon of baking powder
  • A pinch of salt
  • 4 slices of bacon
  • 2 tablespoons of butter
  • Maple syrup for serving (optional)

Instructions

  1. In a skillet over medium heat, cook the bacon until crispy. Set aside on a paper towel to drain excess fat.
  2. In a bowl, whisk together the eggs and milk. In another bowl, mix the flour, sugar, baking powder, and salt. Combine both mixtures until you have a smooth batter.
  3. Melt 1 tablespoon of butter in the same skillet over medium heat. Pour ΒΌ cup of the batter onto the skillet for each pancake. Cook for about 2-3 minutes on each side or until golden brown. Repeat with the remaining batter.
  4. Stack the pancakes on a plate and top them with crispy bacon. Drizzle with maple syrup if desired.

Notes

For fluffier pancakes, use buttermilk instead of regular milk. Feel free to add chocolate chips or berries to the batter.
