Instructions

  1. In a medium saucepan, combine the rolled oats, water or vegetable broth, and salt.
  2. Bring the mixture to a boil, then reduce to a simmer.
  3. Cook for about 5 minutes, stirring occasionally, until the oats are creamy.
  4. Stir in black pepper and olive oil or butter.
  5. Add the cooked vegetables and mix thoroughly.
  6. If using, cook the egg in a separate pan to your liking (fried or poached).
