Description

Ingredients

  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 cup green beans, trimmed and cut
  • 1 zucchini, diced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery; sauté until the vegetables are softened, about 5 minutes.
  2. Stir in the garlic and cook for an additional minute.
  3. Add the vegetable broth, diced tomatoes, green beans, zucchini, and thyme.
  4. Bring to a boil, then reduce the heat and let it simmer for 20-30 minutes until the vegetables are tender.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with fresh parsley.

Notes

Use any seasonal vegetables and herbs for variations. Can add cooked pasta or beans for a heartier soup.
