Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 garlic cloves, minced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 cup green beans, trimmed and cut
- 1 zucchini, diced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery; sauté until the vegetables are softened, about 5 minutes.
- Stir in the garlic and cook for an additional minute.
- Add the vegetable broth, diced tomatoes, green beans, zucchini, and thyme.
- Bring to a boil, then reduce the heat and let it simmer for 20-30 minutes until the vegetables are tender.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
Notes
Use any seasonal vegetables and herbs for variations. Can add cooked pasta or beans for a heartier soup.
