- 1 1/2 cups sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking powder

- 1 cup whole milk
- 1/2 cup granulated sugar (for filling)
- 1/4 cup cornstarch
- 2 large egg yolks (for filling)
- 1 tablespoon butter (for filling)
- 1 teaspoon vanilla extract (for filling)
- 1/2 cup heavy cream (for glaze)
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat the oven to 375°F (190°C).
- Cream together the softened butter and sugar until light and fluffy.
- Beat in the eggs and vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients until just combined.
- Scoop rounded tablespoons of dough onto baking sheets lined with parchment paper.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Let the cookies cool completely on a wire rack.
- For the cream filling, whisk together milk, granulated sugar, cornstarch, and egg yolks in a saucepan.
- Stir constantly over medium heat until thickened and boiling.
- Remove from heat, stir in butter and vanilla extract, cover, and let cool completely.
- Assemble by spreading filling on the flat side of one cookie and topping with another.
- For the glaze, heat heavy cream until simmering, then pour over chocolate chips and whisk until smooth.
- Dip the top of each cookie sandwich into the chocolate glaze and let set before serving.
Notes
Store cookies in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week. Separate layers with parchment paper to prevent sticking.
