Description

Delicious Boston Cream Pie Cookies that combine creamy filling and rich chocolate with soft, sweet cookies.


Ingredients

  • 1 1/2 cups sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup whole milk
  • 1/2 cup granulated sugar (for filling)
  • 1/4 cup cornstarch
  • 2 large egg yolks (for filling)
  • 1 tablespoon butter (for filling)
  • 1 teaspoon vanilla extract (for filling)
  • 1/2 cup heavy cream (for glaze)
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Beat in the eggs and vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients until just combined.
  6. Scoop rounded tablespoons of dough onto baking sheets lined with parchment paper.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Let the cookies cool completely on a wire rack.
  9. For the cream filling, whisk together milk, granulated sugar, cornstarch, and egg yolks in a saucepan.
  10. Stir constantly over medium heat until thickened and boiling.
  11. Remove from heat, stir in butter and vanilla extract, cover, and let cool completely.
  12. Assemble by spreading filling on the flat side of one cookie and topping with another.
  13. For the glaze, heat heavy cream until simmering, then pour over chocolate chips and whisk until smooth.
  14. Dip the top of each cookie sandwich into the chocolate glaze and let set before serving.

Notes

Store cookies in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week. Separate layers with parchment paper to prevent sticking.
