Description

A delightful twist on the classic dessert, these cookies combine a soft, buttery cookie with a creamy filling and rich chocolate glaze.


Ingredients

  • 1 1/2 cups sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup whole milk
  • 1/2 cup granulated sugar (for cream filling)
  • 1/4 cup cornstarch
  • 2 large egg yolks (for cream filling)
  • 1 tablespoon butter (for cream filling)
  • 1 teaspoon vanilla extract (for cream filling)
  • 1/2 cup heavy cream (for chocolate glaze)
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Beat in the eggs and vanilla extract.
  4. Whisk together flour, baking powder, and salt in a separate bowl.
  5. Gradually add dry ingredients to wet ingredients until just combined.
  6. Scoop rounded tablespoons of dough onto lined baking sheets.
  7. Bake for 10-12 minutes until edges are lightly golden. Cool on a wire rack.
  8. For the cream filling, whisk milk, sugar, cornstarch, and egg yolks in a saucepan over medium heat until thickened. Stir in butter and vanilla extract. Cool completely.
  9. To assemble, spread cream filling on one cookie and top with another to form a sandwich.
  10. For the chocolate glaze, heat heavy cream until simmering, pour over chocolate chips, and stir until smooth. Dip the cookie sandwich tops in the glaze and let set.

Notes

For a different twist, add almond extract to the cream filling or use dark chocolate for the glaze.
