- 1/4 cup cornstarch
- 2 large egg yolks (for cream filling)
- 1 tablespoon butter (for cream filling)

- 1/2 cup heavy cream (for chocolate glaze)
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat the oven to 375°F (190°C).
- Cream together the softened butter and sugar until light and fluffy.
- Beat in the eggs and vanilla extract.
- Whisk together flour, baking powder, and salt in a separate bowl.
- Gradually add dry ingredients to wet ingredients until just combined.
- Scoop rounded tablespoons of dough onto lined baking sheets.
- Bake for 10-12 minutes until edges are lightly golden. Cool on a wire rack.
- For the cream filling, whisk milk, sugar, cornstarch, and egg yolks in a saucepan over medium heat until thickened. Stir in butter and vanilla extract. Cool completely.
- To assemble, spread cream filling on one cookie and top with another to form a sandwich.
- For the chocolate glaze, heat heavy cream until simmering, pour over chocolate chips, and stir until smooth. Dip the cookie sandwich tops in the glaze and let set.
Notes
For a different twist, add almond extract to the cream filling or use dark chocolate for the glaze.
