Description
Delicious bite-sized cookies combining the flavors of Boston cream pie with the ease of cookie bites.
Ingredients

- 1 box yellow cake mix
- 2 eggs
- 1/3 cup butter, softened
- 1 (3.25 oz) package instant vanilla pudding mix
- 1 cup heavy whipping cream
- 1/2 cup milk
- 2 tbsp semi-sweet baking chips
- 2 tbsp heavy whipping cream (for ganache)
Instructions
- Preheat oven to 350°F (175°C) and grease a mini muffin pan.
- Sift or whisk the yellow cake mix in a medium bowl to remove lumps.
- Add softened butter and eggs to the cake mix, mixing until a thick dough forms.
- Using a small cookie scoop, place dough into muffin cups and flatten each mound.
- Bake for 9-11 minutes until edges are slightly golden.
- Run a knife around the edge of each cookie to loosen, then cool slightly.
- Press the center of each cookie to create an indentation.
- In a separate bowl, combine vanilla pudding mix, heavy cream, and milk; mix until thickened.
- Pipe vanilla cream into the indentations of each cookie.
- In a microwave-safe bowl, combine chocolate chips and heavy cream; microwave until smooth.
- Spoon ganache onto each cookie bite.
- Refrigerate until ganache is set. Serve chilled or at room temperature.
Notes
Store leftover cookie bites in an airtight container in the refrigerator for up to 3 days.
