A delightful dessert combining creamy cheesecake and rich chocolate ganache for a perfect treat.

- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 600g (3 cups) cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1/4 cup sour cream
- 1 cup heavy cream
- 8 oz (1 cup) semi-sweet chocolate, chopped
- 2 tbsp butter
- 1 box of yellow cake mix (or homemade recipe)
Instructions
- Preheat the oven to 325°F (165°C). In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press the mixture firmly into the bottom of a springform pan. Bake for 8–10 minutes, then set aside to cool.
- Beat the softened cream cheese and granulated sugar until smooth. Add the vanilla extract and eggs, one at a time, mixing well after each addition. Fold in sour cream until fully combined. Pour the batter over the prepared crust and smooth the top. Bake for 50–60 minutes until the center is slightly jiggly. Let cool completely and then chill in the refrigerator for at least 4 hours or overnight.
- In a small saucepan, heat heavy cream over medium heat until simmering. Pour it over the chopped chocolate in a bowl, stirring until smooth. Stir in butter until melted. Let ganache cool to room temperature, then pour over the chilled cheesecake.
- If adding a sponge cake layer, bake yellow cake according to package directions and slice thinly. Place a layer on top of the cheesecake before adding ganache. Let ganache set, then slice and serve.
Notes
Serve chilled with whipped cream or fresh berries. Store leftovers in the refrigerator for 3-4 days.
