A delicious dessert that combines cheesecake with the classic Boston cream pie, featuring a graham cracker crust, creamy filling, pastry cream, and chocolate ganache.

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter (melted)
  • 1/4 cup granulated sugar
  • 24 oz cream cheese (softened)
  • 1 cup granulated sugar
  • 1 cup heavy cream
  • 3 large eggs
  • 2 tsp vanilla extract
  • 2 tbsp all-purpose flour
  • 1 cup whole milk
  • 1/4 cup granulated sugar
  • 2 large egg yolks
  • 1 tbsp cornstarch
  • 1 tsp vanilla extract
  • 1/2 cup heavy cream
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of a springform pan. Bake for 10 minutes, then let it cool.
  3. In a mixing bowl, beat cream cheese and granulated sugar until smooth.
  4. Add heavy cream, eggs, vanilla extract, and flour. Mix until everything is fully combined.
  5. Pour the filling over the crust. Bake for 50-60 minutes, or until the center is just set. Allow the cheesecake to cool completely.
  6. In a saucepan, heat the milk until it begins to steam.
  7. In a separate bowl, whisk together sugar, egg yolks, and cornstarch. Gradually add the hot milk to the egg mixture while whisking.
  8. Return the mixture to the saucepan and cook over medium heat until it thickens. Remove from heat, stir in vanilla extract, and let it cool.
  9. In a small saucepan, heat heavy cream until it begins to steam. Pour it over chocolate chips and let sit for 1 minute. Stir until the mixture is smooth and glossy.
  10. Spread the pastry cream evenly over the cooled cheesecake. Pour the chocolate ganache over the top, spreading it to the edges.

Notes

Use high-quality chocolate for the ganache for a richer flavor. Make sure to let each layer cool completely before adding the next.
