Description

A delicious blend of Boston cream pie and creamy cheesecake featuring a rich filling on a buttery crust topped with smooth chocolate ganache.


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup heavy cream
  • 3 large eggs
  • 2 tsp vanilla extract
  • 2 tbsp all-purpose flour
  • 1 cup whole milk
  • 1/4 cup granulated sugar
  • 2 large egg yolks
  • 1 tbsp cornstarch
  • 1 tsp vanilla extract
  • 1/2 cup heavy cream
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs, melted butter, and sugar.
  3. Press the mixture into the bottom of a springform pan.
  4. Bake for 10 minutes and allow it to cool.
  5. Beat the cream cheese and sugar in a large bowl until smooth.
  6. Add heavy cream, eggs, vanilla, and flour, mixing until fully combined.
  7. Pour the cheesecake filling over the cooled crust.
  8. Bake for 50-60 minutes, or until the center is just set.
  9. Let the cheesecake cool completely before removing it from the pan.
  10. In a saucepan, heat the milk until it begins to steam.
  11. In a separate bowl, whisk together the sugar, egg yolks, and cornstarch.
  12. Gradually add the hot milk to the egg mixture while whisking.
  13. Return the mixture to the saucepan and cook on medium heat until thickened.
  14. Remove from heat, stir in vanilla, and let it cool.
  15. Heat heavy cream in a small saucepan until it begins to steam.
  16. Pour it over the chocolate chips and let it sit for 1 minute.
  17. Stir until the mixture is smooth and glossy.
  18. Spread the pastry cream evenly over the cooled cheesecake.
  19. Pour the chocolate ganache over the top, spreading it to the edges.
  20. Refrigerate for at least 4 hours or overnight before serving.
  21. Slice and serve.

Notes

For a unique twist, consider using different types of chocolate for the ganache.
