Delightful cupcakes combining rich flavors of chocolate and creamy custard, perfect for any celebration.
Ingredients

- 1 box vanilla cake mix (or homemade vanilla cake batter)
- 1/2 cup milk
- 1/2 cup vegetable oil
- 3 large eggs
- 1 tsp vanilla extract
- 1 cup whole milk
- 1/4 cup sugar
- 2 tbsp cornstarch
- 1/4 tsp salt
- 2 large egg yolks
- 1 tbsp unsalted butter
- 1/2 cup heavy cream
- 4 oz semi-sweet chocolate, chopped
- 1 tbsp unsalted butter
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, combine the cake mix, milk, oil, eggs, and 1 tsp vanilla extract. Mix until smooth.
- Line a muffin tin with cupcake liners. Fill each liner with the cupcake batter.
- Bake for 15-18 minutes, or until a toothpick comes out clean.
- Let the cupcakes cool completely.
- In a saucepan, heat 1 cup of milk over medium heat.
- In a separate bowl, whisk together the sugar, cornstarch, salt, egg yolks, and 1 tsp vanilla extract.
- Slowly pour the hot milk into the egg mixture, whisking constantly.
- Pour the mixture back into the saucepan and cook over medium heat until thickened (about 5 minutes). Remove from heat and stir in 1 tbsp of butter.
- Let the custard cool before using.
- In another saucepan, heat the heavy cream over medium heat until it just begins to simmer.
- Pour the hot cream over the chopped chocolate in a bowl, stirring until smooth.
- Add 1 tbsp of butter and mix until fully incorporated.
- Once the cupcakes have cooled, use a small knife to cut a hole in the center of each cupcake, removing the center to make space for the custard filling.
- Spoon the custard filling into each cupcake.
- Pour the chocolate ganache over the top of each filled cupcake, letting it drip down the sides.
- Let the ganache set for a few minutes before serving.
Notes
Make sure the cupcakes are completely cool before filling them to prevent the custard from melting. Store in an airtight container in the refrigerator for 3-4 days.
