Boston Cream Bliss Cupcakes

Description

Delightful cupcakes combining rich flavors of chocolate and creamy custard, perfect for any celebration.


Ingredients

  • 1 box vanilla cake mix (or homemade vanilla cake batter)
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup whole milk
  • 1/4 cup sugar
  • 2 tbsp cornstarch
  • 1/4 tsp salt
  • 2 large egg yolks
  • 1 tbsp unsalted butter
  • 1/2 cup heavy cream
  • 4 oz semi-sweet chocolate, chopped
  • 1 tbsp unsalted butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine the cake mix, milk, oil, eggs, and 1 tsp vanilla extract. Mix until smooth.
  3. Line a muffin tin with cupcake liners. Fill each liner with the cupcake batter.
  4. Bake for 15-18 minutes, or until a toothpick comes out clean.
  5. Let the cupcakes cool completely.
  6. In a saucepan, heat 1 cup of milk over medium heat.
  7. In a separate bowl, whisk together the sugar, cornstarch, salt, egg yolks, and 1 tsp vanilla extract.
  8. Slowly pour the hot milk into the egg mixture, whisking constantly.
  9. Pour the mixture back into the saucepan and cook over medium heat until thickened (about 5 minutes). Remove from heat and stir in 1 tbsp of butter.
  10. Let the custard cool before using.
  11. In another saucepan, heat the heavy cream over medium heat until it just begins to simmer.
  12. Pour the hot cream over the chopped chocolate in a bowl, stirring until smooth.
  13. Add 1 tbsp of butter and mix until fully incorporated.
  14. Once the cupcakes have cooled, use a small knife to cut a hole in the center of each cupcake, removing the center to make space for the custard filling.
  15. Spoon the custard filling into each cupcake.
  16. Pour the chocolate ganache over the top of each filled cupcake, letting it drip down the sides.
  17. Let the ganache set for a few minutes before serving.

Notes

Make sure the cupcakes are completely cool before filling them to prevent the custard from melting. Store in an airtight container in the refrigerator for 3-4 days.
