- 2 cups graham cracker crumbs
- 1/2 cup melted butter
- 3 packages (8 oz each) cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 4 large eggs
- 2 tsp vanilla extract
- 1 cup white chocolate chips, melted and cooled
- 1 cup blueberry puree
- Fresh blueberries
- Mint leaves
Instructions
- Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan generously.
- In a bowl, mix graham cracker crumbs with melted butter. Press the mixture into the bottom of the prepared pan to form the crust.
- In a large bowl, beat cream cheese with sugar until smooth and creamy. Add sour cream, eggs, and vanilla, mixing until fully combined.
- Divide the batter into two parts. Stir melted white chocolate into one half, and mix the other half with blueberry puree.
- Pour alternating spoonfuls of white chocolate and blueberry batters into the crust, swirling with a knife to create a marbled design.
- Bake for 50-60 minutes, until set in the center and slightly puffed at the edges.
- Turn off the oven and let the cheesecake cool inside with the door slightly open for 1 hour.
- Refrigerate for at least 4 hours or overnight until fully set.
- Before serving, top with fresh blueberries and mint leaves.
Notes
Use fresh blueberries for the best flavor. Ensure cream cheese is softened before mixing. Don’t rush the cooling process to avoid cracks.
