Description

Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 tbsp granulated white sugar
  • 1/2 tsp salt
  • 1 cup cold unsalted butter
  • 34 tbsp cold water
  • 1 egg (whisked, for brushing over the lattice crust)
  • Turbinado sugar (for sprinkling)
  • 5 cups fresh blueberries
  • 5 tbsp cornstarch
  • 3/4 cup granulated white sugar
  • 1 tbsp lemon juice
  • 1 1/2 tbsp vanilla bean paste
  • 2 tsp lavender extract

Instructions

  1. In a food processor, pulse together the flour, sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Gradually add cold water, just enough to form a dough. Divide the dough in half and chill it in the refrigerator.
  2. Once chilled, roll out one half of the dough and place it into a pie pan.
  3. In a mixing bowl, combine the blueberries, sugar, vanilla bean paste, cornstarch, lavender extract, and lemon juice. Mix well and pour this filling into the prepared crust.
  4. Roll out the second piece of dough, cut it into strips, and create a lattice pattern over the blueberry filling. Brush the lattice with the whisked egg and sprinkle some Turbinado sugar on top.
  5. Preheat your oven to 425°F (220°C). Cover the edges of the pie crust with aluminum foil to prevent burning. Bake for 20 minutes, then lower the temperature to 375°F (190°C) and bake for another 50-60 minutes, until the filling is bubbly and the crust is golden brown.
  6. Allow the pie to cool for at least 4 hours before serving to help the filling set.

Notes

For best results, use fresh blueberries and ensure the butter is cold for a flaky crust. Cool completely to avoid a runny filling.
