- 2 1/2 cups all-purpose flour
- 2 tbsp granulated white sugar
- 1/2 tsp salt
- 1 cup cold unsalted butter
- 3–4 tbsp cold water
- 1 egg (whisked, for brushing over the lattice crust)
- Turbinado sugar (for sprinkling)
- 5 cups fresh blueberries
- 5 tbsp cornstarch
- 3/4 cup granulated white sugar
- 1 tbsp lemon juice
- 1 1/2 tbsp vanilla bean paste
- 2 tsp lavender extract
Instructions
- In a food processor, pulse together the flour, sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Gradually add cold water, just enough to form a dough. Divide the dough in half and chill it in the refrigerator.
- Once chilled, roll out one half of the dough and place it into a pie pan.
- In a mixing bowl, combine the blueberries, sugar, vanilla bean paste, cornstarch, lavender extract, and lemon juice. Mix well and pour this filling into the prepared crust.
- Roll out the second piece of dough, cut it into strips, and create a lattice pattern over the blueberry filling. Brush the lattice with the whisked egg and sprinkle some Turbinado sugar on top.
- Preheat your oven to 425°F (220°C). Cover the edges of the pie crust with aluminum foil to prevent burning. Bake for 20 minutes, then lower the temperature to 375°F (190°C) and bake for another 50-60 minutes, until the filling is bubbly and the crust is golden brown.
- Allow the pie to cool for at least 4 hours before serving to help the filling set.
Notes
For best results, use fresh blueberries and ensure the butter is cold for a flaky crust. Cool completely to avoid a runny filling.
