Description

Ingredients

  • 1 1/2 cups blueberries (fresh or frozen)
  • 1/4 cup granulated sugar
  • 2 tsp cornstarch
  • 1 tbsp fresh lemon juice
  • 1 cup graham cracker crumbs (about 56 whole crackers)
  • 2 tbsp sugar
  • 2 tbsp melted butter
  • 3 packages (8 oz. each) cream cheese, softened
  • 1 cup sugar
  • 8 oz. sour cream, at room temperature
  • 2 tsp vanilla extract
  • 4 large eggs, at room temperature
  • 2 tbsp flour

Instructions

  1. Make the Blueberry Puree: In a saucepan, combine blueberries, 1/4 cup sugar, lemon juice, and cornstarch. Cook over medium heat for about 5 minutes until thickened. Blend until smooth and cool.
  2. Prepare the Crust: Preheat the oven to 350°F (175°C). Mix graham cracker crumbs, 2 tablespoons sugar, and melted butter. Press into the bottom of a springform pan. Bake for 10 minutes and cool.
  3. Make the Filling: Beat softened cream cheese until fluffy. Gradually add 1 cup sugar. Add sour cream and vanilla extract. Add eggs one at a time, mixing after each addition. Add flour and mix until just combined. Pour over the cooled crust.
  4. Add Blueberry Swirl: Drizzle cooled blueberry puree over cheesecake batter and swirl gently with a knife.
  5. Bake: Place springform pan in a larger baking pan. Pour boiling water into the larger pan. Bake at 325°F (160°C) for 1 1/4 hours, or until just set. Cool completely.
  6. Chill: Refrigerate cheesecake for 5-8 hours or overnight.
  7. Serve: Run a knife around the edges, remove the sides of the pan, slice, and enjoy!

Notes

Use room temperature ingredients for a smoother filling. Do not overmix the filling.
