A delightful dessert combining creamy cheesecake with sweet-tart blueberry puree, perfect for any occasion.

- 1 1/2 cups blueberries (fresh or frozen)
- 1/4 cup granulated sugar
- 2 tsp cornstarch
- 1 tbsp fresh lemon juice
- 1 cup graham cracker crumbs (about 5–6 whole crackers)
- 2 tbsp sugar
- 2 tbsp melted butter
- 3 packages (8 oz. each) cream cheese, softened
- 1 cup sugar
- 8 oz. sour cream, at room temperature
- 2 tsp vanilla extract
- 4 large eggs, at room temperature
- 2 tbsp flour
Instructions
- Make the Blueberry Puree: In a saucepan, combine blueberries, 1/4 cup sugar, lemon juice, and cornstarch. Cook over medium heat for about 5 minutes until thickened. Blend until smooth and cool.
- Prepare the Crust: Preheat the oven to 350°F (175°C). Mix graham cracker crumbs, 2 tablespoons sugar, and melted butter. Press into the bottom of a springform pan. Bake for 10 minutes and cool.
- Make the Filling: Beat softened cream cheese until fluffy. Gradually add 1 cup sugar. Add sour cream and vanilla extract. Add eggs one at a time, mixing after each addition. Add flour and mix until just combined. Pour over the cooled crust.
- Add Blueberry Swirl: Drizzle cooled blueberry puree over cheesecake batter and swirl gently with a knife.
- Bake: Place springform pan in a larger baking pan. Pour boiling water into the larger pan. Bake at 325°F (160°C) for 1 1/4 hours, or until just set. Cool completely.
- Chill: Refrigerate cheesecake for 5-8 hours or overnight.
- Serve: Run a knife around the edges, remove the sides of the pan, slice, and enjoy!
Notes
Use room temperature ingredients for a smoother filling. Do not overmix the filling.
