Description

Delightful Blueberry Pie Bars combining fresh blueberries and a sweet crust in a simple, easy-to-eat form.


Ingredients

  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 1 1/2 cups all-purpose flour
  • Pinch of salt (optional)
  • 1 large egg
  • Heaping 1/2 cup plain or vanilla Greek yogurt (or sour cream)
  • 1/3 cup granulated sugar
  • 2 tsp vanilla extract
  • 1 tbsp all-purpose flour
  • 12 ounces (2 cups) blueberries (fresh or frozen)
  • 1/3 cup granulated sugar (increase to 1/2 cup if berries are sour)
  • 2 tbsp lemon juice
  • 2 tsp cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8-inch square pan with aluminum foil and spray it with cooking spray.
  2. In a large bowl, melt the butter. Add both sugars and whisk together. Stir in the flour and optional salt. Set aside 3/4 cup of this mixture for topping, and press the rest into the bottom of the pan to form the crust.
  3. In a separate bowl, whisk together the egg, Greek yogurt, sugar, and vanilla. Add the flour to this mixture and stir until smooth. Pour this filling over the crust in the pan.
  4. Toss the blueberries with sugar, lemon juice, and cornstarch in another bowl. Spread the blueberry mixture over the filling and sprinkle with the reserved crumble topping.
  5. Bake for about 60 minutes until the topping is golden. Allow the bars to cool for 1-2 hours before slicing them.

Notes

Serve with vanilla ice cream, whipped cream, or chocolate sauce. Store covered in the fridge for up to a week or freeze for up to three months.
