Delightful Blueberry Pie Bars combining fresh blueberries and a sweet crust in a simple, easy-to-eat form.

- 1/2 cup unsalted butter, melted
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar, packed
- 1 1/2 cups all-purpose flour
- Pinch of salt (optional)
- 1 large egg
- Heaping 1/2 cup plain or vanilla Greek yogurt (or sour cream)
- 1/3 cup granulated sugar
- 2 tsp vanilla extract
- 1 tbsp all-purpose flour
- 12 ounces (2 cups) blueberries (fresh or frozen)
- 1/3 cup granulated sugar (increase to 1/2 cup if berries are sour)
- 2 tbsp lemon juice
- 2 tsp cornstarch
Instructions
- Preheat your oven to 350°F (175°C). Line an 8-inch square pan with aluminum foil and spray it with cooking spray.
- In a large bowl, melt the butter. Add both sugars and whisk together. Stir in the flour and optional salt. Set aside 3/4 cup of this mixture for topping, and press the rest into the bottom of the pan to form the crust.
- In a separate bowl, whisk together the egg, Greek yogurt, sugar, and vanilla. Add the flour to this mixture and stir until smooth. Pour this filling over the crust in the pan.
- Toss the blueberries with sugar, lemon juice, and cornstarch in another bowl. Spread the blueberry mixture over the filling and sprinkle with the reserved crumble topping.
- Bake for about 60 minutes until the topping is golden. Allow the bars to cool for 1-2 hours before slicing them.
Notes
Serve with vanilla ice cream, whipped cream, or chocolate sauce. Store covered in the fridge for up to a week or freeze for up to three months.
