Description

Delightful blueberry macarons are chewy almond meringue cookies filled with a creamy blueberry ganache, perfect for any occasion.

Ingredients

Scale
  • 1 1/4 cup + 2 tsp powdered sugar
  • 1 3/4 cup superfine almond meal
  • 1/2 cup + 2 tbsp granulated sugar
  • 34 large egg whites, room temperature
  • 1/4 tsp cream of tartar
  • 1 drop blue gel food coloring
  • 1/2 drop fuchsia gel food coloring
  • 1/2 cup heavy cream
  • 2/3 cup white chocolate chips
  • 1/2 cup fresh blueberries

Instructions

  1. In a bowl, sift together the powdered sugar and almond meal. Set aside.
  2. In a stand mixer, whip egg whites on medium speed until foamy. Then, add cream of tartar.
  3. Gradually add granulated sugar while increasing the speed to medium-high. Whip until medium peaks form. Add food coloring.
  4. Gently fold the almond meal and powdered sugar mixture into the whipped egg whites until the batter flows in ribbons.
  5. Line a baking tray with a silicone mat and pipe the batter into 1 1/2-inch rounds. Let it sit until they form a skin (about 30-60 minutes).
  6. Preheat the oven to 300°F (150°C). Bake for 13-14 minutes. Let the shells cool completely.
  7. Heat blueberries and heavy cream over medium heat until the edges are boiling.
  8. Blend the mixture and strain it if desired.
  9. Reheat the mixture, pour it over white chocolate, let it sit, and then stir until smooth. Chill until thickened.
  10. Pair similar-sized macaron shells and pipe ganache on one shell. Sandwich with another.
  11. Refrigerate overnight for the best flavor.
