Description
Delightful blueberry macarons are chewy almond meringue cookies filled with a creamy blueberry ganache, perfect for any occasion.
Ingredients

- 1 1/4 cup + 2 tsp powdered sugar
- 1 3/4 cup superfine almond meal
- 1/2 cup + 2 tbsp granulated sugar
- 3–4 large egg whites, room temperature
- 1/4 tsp cream of tartar
- 1 drop blue gel food coloring
- 1/2 drop fuchsia gel food coloring
- 1/2 cup heavy cream
- 2/3 cup white chocolate chips
- 1/2 cup fresh blueberries
Instructions
- In a bowl, sift together the powdered sugar and almond meal. Set aside.
- In a stand mixer, whip egg whites on medium speed until foamy. Then, add cream of tartar.
- Gradually add granulated sugar while increasing the speed to medium-high. Whip until medium peaks form. Add food coloring.
- Gently fold the almond meal and powdered sugar mixture into the whipped egg whites until the batter flows in ribbons.
- Line a baking tray with a silicone mat and pipe the batter into 1 1/2-inch rounds. Let it sit until they form a skin (about 30-60 minutes).
- Preheat the oven to 300°F (150°C). Bake for 13-14 minutes. Let the shells cool completely.
- Heat blueberries and heavy cream over medium heat until the edges are boiling.
- Blend the mixture and strain it if desired.
- Reheat the mixture, pour it over white chocolate, let it sit, and then stir until smooth. Chill until thickened.
- Pair similar-sized macaron shells and pipe ganache on one shell. Sandwich with another.
- Refrigerate overnight for the best flavor.

Store in an airtight container in the refrigerator for up to 5 days or freeze for longer storage.
