Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon lime zest
  • 1 tablespoon lime juice
  • 1 cup blueberry preserves
  • 1 cup fresh blueberries
  • 1/2 cup purple-tinted cream cheese frosting
  • Lime slices and zest for garnish

Instructions

  1. Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a bowl, mix flour, butter, granulated sugar, and vanilla extract until the mixture forms a soft dough.
  3. Press about 1 tablespoon of dough into the bottom of each lined muffin cup.
  4. Bake for 10 minutes or until lightly golden. Let cool.
  5. In another bowl, beat cream cheese, powdered sugar, lime zest, and lime juice until smooth and creamy.
  6. Spoon a layer of blueberry preserves onto the cooled crust in each cup.
  7. Pipe or spoon the cream cheese mixture over the blueberry layer, filling each cup nearly to the top.
  8. Spoon more blueberry preserves on top of the cream cheese layer.
  9. Top with a swirl of purple-tinted cream cheese frosting.
  10. Garnish with fresh blueberries, lime slices, and lime zest.
  11. Refrigerate the cupcakes for at least 1 hour to allow the flavors to meld.

Notes

Make sure to add the cream cheese frosting just before serving to keep it looking nice and fresh.
