- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon lime zest
- 1 tablespoon lime juice
- 1 cup blueberry preserves
- 1 cup fresh blueberries
- 1/2 cup purple-tinted cream cheese frosting
- Lime slices and zest for garnish
Instructions
- Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners.
- In a bowl, mix flour, butter, granulated sugar, and vanilla extract until the mixture forms a soft dough.
- Press about 1 tablespoon of dough into the bottom of each lined muffin cup.
- Bake for 10 minutes or until lightly golden. Let cool.
- In another bowl, beat cream cheese, powdered sugar, lime zest, and lime juice until smooth and creamy.
- Spoon a layer of blueberry preserves onto the cooled crust in each cup.
- Pipe or spoon the cream cheese mixture over the blueberry layer, filling each cup nearly to the top.
- Spoon more blueberry preserves on top of the cream cheese layer.
- Top with a swirl of purple-tinted cream cheese frosting.
- Garnish with fresh blueberries, lime slices, and lime zest.
- Refrigerate the cupcakes for at least 1 hour to allow the flavors to meld.
Notes
Make sure to add the cream cheese frosting just before serving to keep it looking nice and fresh.
