Ingredients

  • 16 oz cream cheese, room temperature
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • Pinch of salt
  • 3 large eggs
  • 1 tsp lemon zest
  • 1 cup heavy cream
  • 2 tbsp all-purpose flour
  • 2 cups blueberries

Instructions

  1. Preheat the oven to 450°F (230°C) and line a 7-inch springform pan with parchment paper.
  2. In a mixing bowl, mix cream cheese and sugar for 4-5 minutes until smooth and creamy.
  3. Add vanilla extract, lemon zest, and a pinch of salt.
  4. Gradually mix in heavy cream until fully combined.
  5. Add eggs one at a time, mixing well after each addition.
  6. Sift flour over the mixture and mix until just combined. Gently fold in blueberries.
  7. Pour batter into the prepared springform pan and bake for 20-25 minutes until the top is dark caramelized brown.
  8. Allow to cool completely, then refrigerate overnight before slicing.

Notes

Best served chilled with a dollop of whipped cream and fresh blueberries. Can be dusted with powdered sugar for added sweetness.
