- 16 oz cream cheese, room temperature
- 1/2 cup sugar
- 1 tsp vanilla extract
- Pinch of salt
- 3 large eggs
- 1 tsp lemon zest
- 1 cup heavy cream
- 2 tbsp all-purpose flour
- 2 cups blueberries
Instructions
- Preheat your oven to 450°F (230°C) and line a 7-inch springform pan with parchment paper.
- In a mixing bowl, combine the cream cheese and sugar. Mix for 4-5 minutes until smooth and creamy.
- Add the vanilla extract, lemon zest, and a pinch of salt. Mix well.
- Gradually incorporate the heavy cream until fully combined.
- Add the eggs one at a time, mixing well after each addition.
- Sift the flour over the mixture and mix until just combined. Gently fold in the blueberries.
- Pour the batter into the prepared pan and bake for 20-25 minutes, until the top is dark caramelized brown.
- Let the cheesecake cool completely, then refrigerate overnight before slicing.
Notes
Serve chilled with whipped cream and fresh blueberries. Can be stored in the fridge for up to 3 days or frozen for up to a month.
