Ingredients

  • 16 oz cream cheese, room temperature
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • Pinch of salt
  • 3 large eggs
  • 1 tsp lemon zest
  • 1 cup heavy cream
  • 2 tbsp all-purpose flour
  • 2 cups blueberries

Instructions

  1. Preheat your oven to 450°F (230°C) and line a 7-inch springform pan with parchment paper.
  2. In a mixing bowl, combine the cream cheese and sugar. Mix for 4-5 minutes until smooth and creamy.
  3. Add the vanilla extract, lemon zest, and a pinch of salt. Mix well.
  4. Gradually incorporate the heavy cream until fully combined.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Sift the flour over the mixture and mix until just combined. Gently fold in the blueberries.
  7. Pour the batter into the prepared pan and bake for 20-25 minutes, until the top is dark caramelized brown.
  8. Let the cheesecake cool completely, then refrigerate overnight before slicing.

Notes

Serve chilled with whipped cream and fresh blueberries. Can be stored in the fridge for up to 3 days or frozen for up to a month.
