- 4.5 oz graham crackers
- 6 tbsp unsalted butter, melted
- 3 tbsp granulated sugar
- 3/4 cup fresh blueberries
- 2 tsp lavender extract paste
- 1/2 tsp vanilla bean paste
- 8 oz white chocolate, chopped
- 1/4 cup + 2 tbsp heavy cream
- 1/8 tsp salt
Instructions
- Preheat your oven to 350°F (175°C).
- Pulse graham crackers in a food processor until finely ground.
- Mix graham cracker crumbs, melted butter, and sugar in a bowl until the mixture looks like wet sand.
- Press the mixture into the bottom and sides of an 8-inch tart pan.
- Bake the crust for 8-10 minutes, then let it cool.
- Heat blueberries in a saucepan over medium heat until their juices are released, then strain to remove seeds.
- Melt white chocolate using a double boiler.
- Stir in heavy cream, blueberry reduction, lavender extract, vanilla bean paste, and salt.
- Pour this mixture into the cooled tart crust and chill in the fridge for 2-3 hours until set.
- Once set, top with fresh berries and whipped cream, allowing the tart to sit for 30 minutes before serving.
Notes
Ensure the crust is fully cooled before adding the filling to avoid melting the chocolate. Use fresh blueberries for best flavor. Adjust lavender extract based on taste preference.
