- 4.5 oz graham crackers
- 6 tbsp unsalted butter, melted
- 3 tbsp granulated sugar
- 3/4 cup fresh blueberries
- 2 tsp lavender extract paste
- 1/2 tsp vanilla bean paste
- 8 oz white chocolate, chopped
- 1/4 cup + 2 tbsp heavy cream
- 1/8 tsp salt
Instructions
- Preheat the oven to 350°F (175°C).
- Pulse the graham crackers in a food processor until finely ground.
- In a bowl, mix the graham cracker crumbs, melted butter, and granulated sugar until the texture resembles wet sand.
- Press the mixture into the bottom and sides of an 8-inch tart pan.
- Bake for 8-10 minutes. Let the crust cool completely.
- In a saucepan, heat the blueberries over medium heat until they release their juices, then strain the mixture.
- In a double boiler, melt the white chocolate.
- Stir in the heavy cream, blueberry reduction, lavender extract paste, vanilla bean paste, and salt.
- Pour the mixture into the cooled tart crust and chill for 2-3 hours until set.
- Top with fresh berries and whipped cream. Let sit at room temperature for 30 minutes before serving.

Choose high-quality white chocolate for the best flavor. Adjust lavender extract as needed.
