Description

A delightful coffee cake combining the sweetness of blueberries with rich cream cheese and a buttery streusel topping, perfect for breakfast or dessert.


Ingredients

  • 8 oz cream cheese, softened
  • 1 egg white
  • 1/2 teaspoon pure vanilla extract
  • 1 1/4 cup fresh blueberries
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 5.5 tablespoons unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 whole egg + 1 egg yolk
  • 3/4 cup sour cream
  • 1 teaspoon pure vanilla extract
  • 1/3 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 3 tablespoons unsalted butter, chilled and diced

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. In a mixing bowl, combine the cream cheese, 1/4 cup sugar, and vanilla until creamy. Add the egg white and mix until just combined.
  3. In a separate bowl, sift together the flour, baking powder, baking soda, and salt. In another bowl, cream the butter and 1/2 cup sugar, then mix in the whole egg, egg yolk, and vanilla. Gradually add the flour mixture and sour cream, mixing until smooth.
  4. Pour the batter into the prepared pan, top with 1/3 cup of blueberries, and spread the cream cheese mixture over the batter. Add the remaining blueberries on top.
  5. For the streusel, mix 1/3 cup sugar, 1/2 cup flour, and chilled butter until crumbly. Sprinkle over the cake.
  6. Bake for 40-45 minutes or until a toothpick comes out clean.
  7. Cool on a wire rack before removing from the pan.
  8. Store leftovers in the fridge.

Notes

Store in an airtight container in the fridge for 3-4 days. Can be frozen for longer storage.
