Ingredients

- 1 cup rolled oats
- 1/2 cup almond flour
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 2 large eggs
- 1/2 cup cottage cheese
- 1/4 cup honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1 cup fresh or frozen blueberries
Instructions
- Preheat the oven to 350°F (175°C). Grease a baking dish with non-stick spray or a bit of butter.
- In a medium bowl, combine rolled oats, almond flour, baking powder, cinnamon, and salt.
- In another bowl, whisk together eggs, cottage cheese, honey (or maple syrup), and vanilla extract until smooth.
- Gradually stir the wet ingredients into the dry mixture, mixing until just combined.
- Gently fold in the blueberries.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 25–30 minutes or until the top is golden and the center is set.
- Allow to cool for a few minutes before slicing and serving.
Notes
Serve warm or at room temperature, optionally with honey or yogurt on top. Leftovers can be stored in the fridge for up to 3 days or frozen for later.
