A nutritious and delicious breakfast bake made with oats, cottage cheese, and fresh blueberries, perfect for busy mornings.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup cottage cheese
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking dish with non-stick spray or a bit of butter.
  2. In a medium bowl, combine rolled oats, almond flour, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together eggs, cottage cheese, honey (or maple syrup), and vanilla extract until smooth.
  4. Gradually stir the wet ingredients into the dry mixture, mixing until just combined.
  5. Gently fold in the blueberries.
  6. Pour the mixture into the prepared baking dish and spread evenly.
  7. Bake for 25–30 minutes or until the top is golden and the center is set.
  8. Allow to cool for a few minutes before slicing and serving.

Notes

Serve warm or at room temperature, optionally with honey or yogurt on top. Leftovers can be stored in the fridge for up to 3 days or frozen for later.
