  • 1 1/2 cups Granulated Sugar
  • 3/4 cup Unsweetened Cocoa Powder
  • 1 1/2 tsp Baking Powder
  • 1 1/2 tsp Baking Soda

  • 2 large Eggs
  • 1 cup Whole Milk
  • 1/2 cup Vegetable Oil
  • 2 tsp Vanilla Extract
  • 1 cup Boiling Water
  • 2 cups Fresh Blueberries (for filling)
  • 1 tbsp Dried Culinary Lavender
  • 1/2 cup Granulated Sugar (for filling)
  • 1 tbsp Cornstarch
  • 2 tbsp Lemon Juice (for filling)
  • 1 cup Heavy Cream, chilled
  • 1/2 cup Mascarpone Cheese
  • 1 cup Fresh Blueberries (for glaze)
  • 1/2 cup Granulated Sugar (for glaze)
  • 1/4 cup Water
  • 1 tbsp Lemon Juice (for glaze)
  • Fresh Blueberries and Blackberries (for decoration)
  • Fresh Lavender Sprigs (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix in the eggs, milk, vegetable oil, and vanilla until the mixture is smooth. Stir in the boiling water carefully.
  3. Divide the batter evenly between the two pans and bake for 30-35 minutes. Check with a toothpick to ensure it’s done. Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack.
  4. For the filling, combine the blueberries, dried lavender, sugar, cornstarch, and lemon juice in a saucepan. Cook on medium heat until thickened, about 10 minutes. Strain the mixture and let it cool. Once cooled, fold it into the whipped cream and mascarpone cheese.
  5. For the glaze, cook the blueberries, sugar, water, and lemon juice in a saucepan until thickened, about 5-7 minutes. Strain and let it cool.
  6. To assemble the cake, place one cake layer on a plate and spread half of the filling on top. Add the second layer and cover it with the remaining filling. Pour the blueberry glaze on top.
  7. Decorate the cake with fresh blueberries, blackberries, and optional lavender sprigs. Refrigerate for 1 hour before serving.

Notes

Use high-quality cocoa powder for better flavor. Adjust the lavender quantity according to your taste.
