Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp dried lavender buds (food-grade)
  • 3/4 cup whole milk
  • 1/4 cup boiling water
  • 1/2 cup blueberries (fresh or frozen)
  • 1 cup heavy cream
  • 8 oz semi-sweet chocolate, chopped
  • 1 tbsp dried lavender buds (food-grade)
  • 1 cup fresh or frozen blueberries
  • 1/4 cup sugar
  • 1 tbsp lemon juice
  • Fresh blueberries (for garnish)
  • Lavender sprigs (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  2. In a small saucepan, heat the milk and steep the dried lavender buds. Once done, strain the milk to remove the lavender.
  3. In a bowl, mix the all-purpose flour, cocoa powder, baking powder, baking soda, and salt.
  4. In another bowl, beat the softened butter and sugar together until creamy. Add the eggs and vanilla extract.
  5. Gradually add the dry flour mixture and the lavender-infused milk into the wet ingredients. Mix well.
  6. Add the boiling water and blueberries to the batter and stir gently.
  7. Divide the batter evenly between the two prepared cake pans. Bake for 25-30 minutes or until a toothpick comes out clean. Allow the cakes to cool completely.
  8. For the ganache, heat the heavy cream and steep the dried lavender buds, then strain it. Mix the warm cream with the chopped chocolate until smooth.
  9. For the blueberry compote, cook the blueberries, sugar, and lemon juice in a saucepan until thickened.
  10. Assemble the cake by placing one layer on a plate. Spread some blueberry compote and pour ganache on top. Place the second layer and repeat the process.
  11. Garnish the top with fresh blueberries and optional lavender sprigs.
  12. Slice and serve!

Notes

Serve at room temperature. Store leftovers in an airtight container for up to three days at room temperature or refrigerate for up to a week.
