- 1/2 cup unsweetened cocoa powder

- 1 cup sugar
- 1/2 cup unsalted butter, softened

- 1 tsp dried lavender buds (food-grade)
- 3/4 cup whole milk
- 1/4 cup boiling water
- 1/2 cup blueberries (fresh or frozen)
- 1 cup heavy cream
- 8 oz semi-sweet chocolate, chopped
- 1 tbsp dried lavender buds (food-grade)
- 1 cup fresh or frozen blueberries
- 1/4 cup sugar
- 1 tbsp lemon juice
- Fresh blueberries (for garnish)
- Lavender sprigs (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
- In a small saucepan, heat the milk and steep the dried lavender buds. Once done, strain the milk to remove the lavender.
- In a bowl, mix the all-purpose flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, beat the softened butter and sugar together until creamy. Add the eggs and vanilla extract.
- Gradually add the dry flour mixture and the lavender-infused milk into the wet ingredients. Mix well.
- Add the boiling water and blueberries to the batter and stir gently.
- Divide the batter evenly between the two prepared cake pans. Bake for 25-30 minutes or until a toothpick comes out clean. Allow the cakes to cool completely.
- For the ganache, heat the heavy cream and steep the dried lavender buds, then strain it. Mix the warm cream with the chopped chocolate until smooth.
- For the blueberry compote, cook the blueberries, sugar, and lemon juice in a saucepan until thickened.
- Assemble the cake by placing one layer on a plate. Spread some blueberry compote and pour ganache on top. Place the second layer and repeat the process.
- Garnish the top with fresh blueberries and optional lavender sprigs.
- Slice and serve!
Notes
Serve at room temperature. Store leftovers in an airtight container for up to three days at room temperature or refrigerate for up to a week.
