Description

A delightful cake that combines the sweet and tangy flavor of blueberries with rich chocolate and a hint of lavender.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp culinary lavender, finely ground
  • 3/4 cup unsalted butter, softened
  • 1 1/2 cups sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 1/2 cup fresh or frozen blueberries
  • 1/2 cup mini chocolate chips
  • 1/2 cup butter, softened for frosting
  • 4 oz cream cheese
  • 3 cups powdered sugar
  • 2 tbsp blueberry puree
  • 1/2 tsp lavender extract or 1/2 tsp ground culinary lavender

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and line two 8-inch round pans.
  2. In a bowl, whisk together the flour, cocoa powder, baking powder, baking soda, salt, and ground lavender.
  3. In another bowl, cream the softened butter and sugar until fluffy.
  4. Beat in the eggs one at a time, then add the vanilla extract.
  5. Alternate mixing in the flour mixture and buttermilk until everything is just combined.
  6. Gently fold in the blueberries and chocolate chips.
  7. Divide the batter evenly between the prepared pans and bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow the cakes to cool completely.
  9. For the frosting, beat the softened butter and cream cheese together until smooth. Gradually add the powdered sugar, mixing well.
  10. Then mix in the blueberry puree and lavender extract.
  11. Frost the cooled cakes with the prepared frosting.

Notes

Serve at room temperature. Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
