- 1 1/2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup sugar
- 1/2 cup butter (softened)
- 2 eggs
- 1 tsp vanilla extract
- 1 cup milk
- 1/2 cup water
- 1/4 cup sugar (for lavender syrup)
- 1 tbsp dried culinary lavender
- 1 1/2 cups fresh blueberries
- 1/4 cup sugar (for blueberry filling)
- 1 tbsp lemon juice
- 1 cup chocolate chips
- 1/2 cup heavy cream
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 8-inch cake pans.
- In a bowl, mix flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, cream together sugar and softened butter. Add the eggs one at a time, then stir in vanilla extract.
- Gradually mix in the dry ingredients and milk until well combined.
- To make the lavender syrup, combine water, sugar, and dried lavender in a saucepan. Bring to a boil, reduce heat, and simmer for 5 minutes. Strain and let cool.
- For the blueberry filling, mix fresh blueberries, sugar, and lemon juice in a saucepan. Cook until the blueberries release their juice.
- For the chocolate ganache, heat the heavy cream and pour it over chocolate chips. Stir until smooth.
- Divide the cake batter into prepared pans and bake for 30 minutes.
- Once cooled, layer the cakes with blueberry filling, drizzle with lavender syrup, and pour chocolate ganache over the top.
Notes
Serve with a dollop of whipped cream or sprinkles of fresh blueberries for presentation. Store in an airtight container at room temperature for up to three days, or refrigerate for a week.
