- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup sour cream
- 1 cup fresh blueberries
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 large egg
- 1/2 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease and flour a 9-inch round cake pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large bowl, cream the softened butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition, and stir in the vanilla extract.
- Gradually mix in the dry ingredients, alternating with the sour cream, until just combined. Gently fold in the blueberries.
- In a separate bowl, beat the cream cheese and sugar until smooth. Add the egg and vanilla extract, mixing until fully combined.
- Pour half of the cake batter into the prepared pan, spreading it evenly. Spoon half of the cheesecake mixture on top of the batter. Repeat with the remaining cake batter and cheesecake mixture. Use a knife to gently swirl the cheesecake mixture into the cake batter.
- Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 15 minutes before transferring to a wire rack to cool completely. Slice and enjoy!
Notes
For best results, use fresh blueberries and make sure the cream cheese is softened. You can also use other fruits like raspberries or strawberries.
