- 2 slices of bread (gluten-free or your choice)
- 1 ounce cream cheese
- 1/4 cup blueberries (fresh or frozen)
- 1 large egg
- 2 tablespoons heavy cream
- A pinch of salt
- A pinch of cinnamon
- 1/2 teaspoon vanilla extract
- 1 tablespoon butter
- Powdered sugar, whipped cream, and maple syrup for garnish (optional)
Instructions
- Soften the cream cheese and spread it on one side of each slice of bread.
- Warm the blueberries in the microwave until they start to burst. Layer the blueberries on one slice of bread and place the other slice on top to create a sandwich.
- In a shallow dish, whisk together the egg, heavy cream, salt, vanilla extract, and cinnamon. Soak the sandwich in the mixture, ensuring both sides are well-coated.
- Heat a skillet over medium heat and add the butter. Cook the French toast until golden brown on one side, then flip and cook the other side until browned.
- Top with powdered sugar, whipped cream, fresh blueberries, and maple syrup as desired.
Notes
Use day-old bread for improved texture. You can use low-fat cream cheese for a lighter option.
