Ingredients

  • 1 ounce cream cheese
  • 1/4 cup blueberries (fresh or frozen)
  • 1 large egg
  • 2 tablespoons heavy cream
  • A pinch of salt
  • A pinch of cinnamon
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon butter
  • Powdered sugar, whipped cream, and maple syrup for garnish (optional)

Instructions

  1. Soften the cream cheese and spread it on one side of each slice of bread.
  2. Warm the blueberries in the microwave until they start to burst. Layer the blueberries on one slice of bread and place the other slice on top to create a sandwich.
  3. In a shallow dish, whisk together the egg, heavy cream, salt, vanilla extract, and cinnamon. Soak the sandwich in the mixture, ensuring both sides are well-coated.
  4. Heat a skillet over medium heat and add the butter. Cook the French toast until golden brown on one side, then flip and cook the other side until browned.
  5. Top with powdered sugar, whipped cream, fresh blueberries, and maple syrup as desired.

Notes

Use day-old bread for improved texture. You can use low-fat cream cheese for a lighter option.
