A delightful combination of cheesecake and fresh blueberries in flaky puff pastry, perfect for gatherings or special desserts.

- 18 oz fresh blueberries
- 1/3 cup sugar
- 1 tsp lemon juice
- 7 tbsp water, divided
- 3 tbsp cornstarch
- 8 oz cream cheese (softened)
- 1/3 cup sugar
- 1 tsp lemon juice
- 1 tsp vanilla extract
- 2 boxes puff pastry shells
Instructions
- In a saucepan, combine the blueberries, 1/3 cup of sugar, 1 tsp of lemon juice, and 3 tablespoons of water. Stir occasionally and bring the mixture to a gentle boil for 4–5 minutes.
- Mix the cornstarch with the remaining 4 tablespoons of water and stir it into the blueberries to thicken the filling. Remove from heat and cool.
- In a mixing bowl, beat the softened cream cheese until smooth. Add 1/3 cup of sugar, 1 tsp of lemon juice, and 1 tsp of vanilla extract. Mix until creamy.
- Follow the baking instructions on the puff pastry boxes. Once baked, remove the tops of the pastry shells to create space for the fillings.
- Spoon the cream cheese filling into the pastry shells, followed by the blueberry filling. Garnish with fresh blueberries.
Notes
Ensure cream cheese is softened for easier mixing. Use fresh blueberries for best flavor.
