A delightful treat combining creamy cheesecake and sweet blueberries in a fluffy muffin.


Ingredients

  • 1 cup fresh blueberries
  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup cream cheese, softened
  • 1/4 cup milk
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 cup brown sugar
  • 1/4 cup oatmeal
  • 1/4 cup flour (for crumble)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a muffin tin with liners.
  2. In a bowl, combine 1 1/2 cups of flour, 1/2 cup of sugar, 2 tsp of baking powder, and 1/2 tsp of salt.
  3. In another bowl, mix 1/2 cup of melted butter, 1/2 cup of cream cheese, 1/4 cup of milk, 1 large egg, and 1 tsp of vanilla until smooth.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Gently fold in the blueberries.
  5. In a separate bowl, mix 1/4 cup of brown sugar, 1/4 cup of oatmeal, and 1/4 cup of flour to make the crumble topping.
  6. Fill each muffin liner with the muffin batter, then sprinkle the crumble over the top.
  7. Bake for about 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool slightly before serving. Enjoy your delicious blueberry cheesecake muffins!

Notes

For best flavor, use fresh blueberries. Muffins can be made ahead and stored in an airtight container.
