Description

Delightful Blueberry Cheesecake Bars combining rich cheesecake with fresh blueberries, perfect for gatherings or a sweet snack.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 2 cups fresh blueberries
  • 1/2 cup blueberry jam
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 cup blueberry yogurt
  • 1 tablespoon lemon juice
  • Blue sugar sprinkles for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix together the all-purpose flour, melted butter, granulated sugar, and salt until a dough forms. Press the dough evenly into the bottom of the prepared pan.
  3. Bake the crust for 15-18 minutes, or until lightly golden. Remove from the oven and let it cool completely.
  4. Spread the blueberry jam over the cooled crust, then top with fresh blueberries, distributing them evenly.
  5. In a mixing bowl, beat the softened cream cheese, powdered sugar, vanilla extract, blueberry yogurt, and lemon juice until smooth and creamy.
  6. Gently spread the cream cheese mixture over the blueberry layer, smoothing the top with a spatula.
  7. Chill the bars in the refrigerator for at least 2 hours, or until set.
  8. Once set, cut into squares and garnish with blue sugar sprinkles before serving.

Notes

Enjoy these bars cold or at room temperature. They can be stored in an airtight container in the refrigerator for 4 to 5 days.
