Ingredients

  • 1/2 cup blueberries
  • 1 tablespoon sweetener of choice (sugar, honey, or a sugar substitute)
  • 2 teaspoons lemon juice (optional)
  • Zest of 1 lemon (optional)
  • 12 oz cream cheese (or vegan cream cheese)
  • 3/4 cup plain yogurt (or dairy-free yogurt)
  • 1/2 cup sweetener of choice
  • 1 1/2 teaspoons pure vanilla extract
  • 1 tablespoon cornstarch (or 4 tablespoons almond flour)
  • Optional Crust: graham cracker crust or almond flour crust

Instructions

  1. Prepare the Pan: Line an 8-inch square pan with parchment paper. If using a crust, press it into the bottom of the pan. Bring the cream cheese to room temperature and preheat the oven to 350°F (175°C).
  2. Create the Blueberry Topping: In a small saucepan, combine blueberries, lemon juice, and 1 tablespoon sweetener. Cook over medium heat, stirring constantly until smooth. Set aside.
  3. Make the Cheesecake Filling: In a blender or mixing bowl, combine cream cheese, yogurt, sweetener, vanilla extract, and cornstarch. Blend until smooth; avoid over-blending. Smooth filling into the prepared pan.
  4. Assemble the Bars: Drop spoonfuls of blueberry topping onto cheesecake filling. Use a knife or toothpick to swirl.
  5. Bake: Place pan in the oven and bake for 25 minutes. Turn off the oven and let bars sit for 10 minutes without opening the door.
  6. Cool and Chill: Let cool completely at room temperature, then refrigerate for a few hours (or overnight) to firm up. Slice into squares and serve chilled.

Notes

Best served chilled, can be topped with whipped cream. Store leftovers in an airtight container for up to 5 days.
