- 10 sheets graham crackers, crushed
- 2 tablespoons granulated sugar
- 5 tablespoons unsalted butter, melted
- 16 ounces full-fat cream cheese, softened
- 1/3 cup granulated sugar
- 2 large eggs, at room temperature
- 4 tablespoons all-purpose flour, divided
- 2 teaspoons pure vanilla extract
- 2 tablespoons lemon juice
- 1 tablespoon lemon zest
- 1 1/2 cups fresh blueberries
Instructions
- Preheat the oven to 350°F (180°C). Line an 8-inch square pan with parchment paper.
- In a food processor, pulse the graham crackers until fine. Add the sugar and melted butter, and blend until combined.
- Press the graham mixture evenly into the bottom of the prepared pan. Bake for 8 minutes, then set aside to cool completely.
- In a stand mixer bowl, beat the cream cheese and sugar on high speed until smooth and creamy.
- Add the eggs, 2 tablespoons flour, vanilla extract, lemon juice, and lemon zest, and mix at medium speed until well blended.
- In a separate bowl, toss the blueberries with the remaining 2 tablespoons of flour to prevent them from sinking. Gently fold the blueberries into the cheesecake mixture.
- Pour the filling over the graham crust, spreading it evenly. Bake for 30-35 minutes or until the edges are set and lightly golden, and the center is slightly jiggly.
- Allow the bars to cool at room temperature. Then chill in the fridge for at least 2 hours before slicing and serving.
Notes
Serve garnished with extra fresh blueberries or powdered sugar. Pairs well with whipped cream or vanilla ice cream.
