Delightful dessert bars combining creamy cheesecake with fresh blueberries, perfect for gatherings or home enjoyment.


Ingredients

  • 10 sheets graham crackers, crushed
  • 2 tablespoons granulated sugar
  • 5 tablespoons unsalted butter, melted
  • 16 ounces full-fat cream cheese, softened
  • 1/3 cup granulated sugar
  • 2 large eggs, at room temperature
  • 4 tablespoons all-purpose flour, divided
  • 2 teaspoons pure vanilla extract
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 1 1/2 cups fresh blueberries

Instructions

  1. Preheat the oven to 350°F (180°C). Line an 8-inch square pan with parchment paper.
  2. In a food processor, pulse the graham crackers until fine. Add the sugar and melted butter, and blend until combined.
  3. Press the graham mixture evenly into the bottom of the prepared pan. Bake for 8 minutes, then set aside to cool completely.
  4. In a stand mixer bowl, beat the cream cheese and sugar on high speed until smooth and creamy.
  5. Add the eggs, 2 tablespoons flour, vanilla extract, lemon juice, and lemon zest, and mix at medium speed until well blended.
  6. In a separate bowl, toss the blueberries with the remaining 2 tablespoons of flour to prevent them from sinking. Gently fold the blueberries into the cheesecake mixture.
  7. Pour the filling over the graham crust, spreading it evenly. Bake for 30-35 minutes or until the edges are set and lightly golden, and the center is slightly jiggly.
  8. Allow the bars to cool at room temperature. Then chill in the fridge for at least 2 hours before slicing and serving.

Notes

Serve garnished with extra fresh blueberries or powdered sugar. Pairs well with whipped cream or vanilla ice cream.
