Description

Blueberry cake donuts combining the moistness of cake with fresh blueberries, topped with a sweet glaze.


Ingredients

  • 2 cups all-purpose flour, spooned and leveled
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cardamom (optional)
  • 1 1/2 cups fresh blueberries
  • 1 tbsp all-purpose flour (for tossing the blueberries)
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated white sugar
  • 2 large eggs, at room temperature
  • 1 tsp vanilla extract
  • 1/2 cup sour cream, at room temperature
  • 1/2 cup whole milk, at room temperature
  • 2 cups powdered sugar
  • 2 tbsp blueberry jam
  • 23 tbsp milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a donut pan and set it aside.
  2. In a small bowl, whisk together the all-purpose flour, baking powder, salt, and ground cardamom (if using). Set aside.
  3. In another small bowl, add the blueberries and sprinkle 1 tbsp of flour over them. Stir to coat, then set aside.
  4. In a large bowl, whisk together the melted butter, granulated sugar, eggs, vanilla, sour cream, and milk until smooth.
  5. Gradually add the dry ingredients to the wet ingredients, whisking just until combined.
  6. Gently fold in the floured blueberries using a rubber spatula.
  7. Transfer the batter to a piping bag, cut off the tip, and pipe the batter into the prepared donut pan until each well is about three-quarters full.
  8. Bake for 11-12 minutes or until a toothpick inserted into the center comes out clean. Let them cool for 10 minutes in the pan before transferring to a wire rack to cool completely.
  9. In a large mixing bowl, whisk together the powdered sugar, blueberry jam, vanilla extract, and 2 tbsp of milk until smooth. Adjust the consistency by adding more milk if necessary.
  10. Dip each cooled donut into the glaze and return them to the wire rack. Let the glaze set for about 30 minutes before serving.

Notes

To store, place in an airtight container. Fresh at room temperature for 2-3 days or refrigerated for up to a week.
