Description

A rich dessert featuring a fudgy brownie base topped with creamy cheesecake and fresh blueberry topping.


Ingredients

  • 200 g dark chocolate (at least 60% cacao solids)
  • 200 g butter, softened
  • 200 g granulated sugar (or brown sugar)
  • 3 large eggs
  • 2 tsp instant espresso powder
  • 1 tbsp hot water
  • 110 g all-purpose flour
  • 1 tsp salt
  • 600 g cream cheese, softened
  • 150 g sugar
  • 3 large eggs
  • 2 tsp vanilla extract
  • 400 g fresh blueberries
  • Juice of 1/2 lemon
  • 1 tbsp sugar

Instructions

  1. Preheat your oven to 170°C (325°F). Grease a 9-inch springform pan and line the base with parchment paper.
  2. Melt the dark chocolate in the microwave.
  3. Cream butter and sugar together until smooth in a large bowl.
  4. Dissolve the instant espresso powder in hot water and mix into the butter mixture.
  5. Add eggs one at a time, mixing well after each addition.
  6. Stir in the melted chocolate, then fold in the flour and salt until combined.
  7. Pour the brownie batter into the prepared pan.
  8. For the cheesecake layer, beat cream cheese and sugar together until smooth.
  9. Add eggs one at a time, then vanilla, mixing until well blended.
  10. Pour the cheesecake mixture over the brownie layer in the pan.
  11. Bake for 1 to 2 hours, or until edges are lightly browned.
  12. Let the cheesecake cool in the oven for 1 hour, then refrigerate for at least 4 hours.
  13. For the blueberry topping, combine blueberries, lemon juice, and sugar in a saucepan over medium heat. Boil until thickened, then cool.
  14. Spoon the blueberry topping over the chilled cheesecake, slice, and serve.

Notes

Serve chilled with whipped cream or vanilla ice cream. Garnish with extra blueberries for presentation.
